I love taking green juices and green smoothies because I feel very good physically in doing so, it gives me energy and I feel I am nurturing my body and my mind with healthy ingredients, but always having a fresh bushel of spinach and kale on hand isn’t exactly feasible, especially since they spoil so fast, and it turns out that with our routine of everyday life we often have no time to do it.
The solution I found to facilitate this process was making kale and spinach cubes! Simply pre-puree your greens into handy ice cubes. This way you’ll always have greens on hand to pop in a smoothie, even if you haven’t been to the grocery store in two weeks. Feel free to use any type of leafy green you have available but kale and spinach seem to work the best. You can make mashed with raw kale and spinach or cooked, I add to my smoothies raw kale and spinach so I made with raw leaf.
Kale and spinach cubes are a great option for those who have not got used to the taste green juices. In addition, the texture is a delight, like a smoothie. I also use the cubes in quinoa or sauces.
Kale and Spinach Cubes
Prep Time: 5 minutes
Cook Time: 30 minutes
Total Time: 35 minutes
Servings: 14 cubes
2 cups spinach
2 cups kale
¼ cup water
1.Wash your greens and remove the fibrous center rib from the kale.
2. Puree the greens with water for 1-2 minutes or until it reaches a pourable consistency.
3. Pour into an ice cube tray and freeze for 30 minutes minimum.
4. Add as many as you like to any smoothie.
